Allison Ballina MS RD LDNIngredients:3 small russet potatoes1/2 c. low-fat cottage cheese1 large egg1 1/2 tbsp. dill1/2 tsp. minced garlic2 scallions, diced1/2 tsp. salt1/4 tsp. pepperDirections:Bake potatoes at 350 degrees for 35-40 minutes, or until fully cooked.When cooked, slice potatoes in half, then scoop out center of potato, leaving skin intact.Place contents of potato in food processor with cottage cheese, egg, scallions, dill, garlic, salt, and pepper. Pulse until well blended.Scoop potato mixture back into potato skins, heaping over the top.Place filled potatoes back in oven in baking dish at 400 degrees for 20-25 minutes.
