Sheet Pan Mediterranean Bowls

Serving Size: Serves 4
Ingredients:
- 1 can chickpeas– drained and rinsed
- 1 red bell pepper– julienned
- 1 red onion–roughly chopped
- 2.5 cups potatoes– cubed
- Premade Tzaziki (we love the Trader Joe’s one!)– ~2 TBSP on each serving
Spices and Seasoning:
- 2 TBSP olive oil
- 2 TBSP paprika
- 2 TBSP chilli powder
- 2 tsp dried basil
- 1 TBSP garlic powder
- 2 tsp oregano
- 1 tsp dried dill
- 1 tsp dried parsley
Directions:
- Preheat the oven to 400F.
- Line a large baking sheet with parchment paper.
- Wash and chop the bell pepper, red onion, and potatoes to desired sizes. Spread across sheet pan.
- Drain and rinse the chickpeas and dump onto sheet pan.
- Drizzle veggies with olive oil and spices. Mix until evenly covered, and bake for 40 minutes or until the potatoes are cooked through.
- Remove from oven and serve! Top each serving with 2 TBSP of premade tzatziki. (We love the Trader Joe’s one!) Enjoy!
