Nutty Mixed Berry Crumble

Today we are sharing a recipe for a mixed berry crumble that is the perfect summer treat! If you’re looking for a way to use up fresh or frozen berries, this is it. The original recipe is credited to Rachael’s Good Eats.

Prep: 15 min | Cook: 40 min | Total: 1 hour
Ingredients (Filling):
- 3.5 cups berries of choice
- If frozen, thaw before use
- 3 TBSP maple syrup
- 1 tsp vanilla extract
- Juice of 1/2 lemon
- 2 TBSP cornstarch
- 1/2 tsp cinnamon
Ingredients (Crumble):
- 1/4 cup pumpkin seeds
- 1/3 cup walnuts
- 1/3 cup pecans
- 1/3 cup almond flour (or flour of choice)
- 3 tbsp ground flaxseed
- 2-3 tbsp coconut flakes
- 1/3 cup melted butter
- 2 TBSP cornstarch
- 2 TBSP maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- pinch sea salt
Directions:
- Preheat the oven to 350°F.
- Prepare an 8-inch cast iron skillet or baking dish by coating it with a thin layer of nonstick spray or butter.
- Mix together all filling ingredients and pour into the skillet, spreading along the bottom.
- To prepare the crumble, you will need can use a food processor, a blender, or chop by hand. Pulse or chop the pumpkin seeds, walnuts, and pecans into smaller pieces.
- Add remaining crumble ingredients to food processor/blender (if utilizing) and pulse several more times until you get a crumbly texture.
- Spread the crumble over the top of the berry mixture in the skillet/dish.
- Bake until bubby (About 40-45 minutes)
- Let cool and enjoy! (Optional: top with vanilla ice cream!)
