Grilled Summer Veggies

Today we are sharing a recipe for the perfect grilled summer veg! When you want to add some extra color to your plate, look no further! This absolutely delicious recipe was recommended to us by RD Laura!

Ingredients:
- 1 sweet onion
- 2 zucchinis
- 2 bell peppers
- 1 eggplant
- 1 tbsp avocado oil
- 1 tbsp balsamic vinegar
- Salt/pepper to taste
- 1-2 tbsp Trader Joe's Chimichurri Sauce
Directions:
- Chop all veggies into ~1 in chunks.
- Toss veggies in oil, vinegar, salt/pepper until well coated.
- Roast on the grill medium-high heat using a grill pan o veggie basket.
- Drizzle Chimichurri sauce over vegetables, toss, and enjoy!
