Recipe Adapted From Erin Lives Whole
This is one of our favorite meals to make! It is a quick dish you can throw together for lunch or dinner. It can also be completely customizable to your taste preferences. Add in or swap veggies that better fit your tastes.
Serving Size: 15 Meatballs (3 Bowls) | Total Time: 40 Minutes
Ingredients– Meatballs
- 1lb ground turkey
- 2 cloves garlic, minced
- 1/4 large red onion
- 1 egg
- 1/2 cup breadcrumbs or almond flour
- 1/4 cup chopped fresh dill
- 1/2 tbsp dried oregano
- Salt, to taste
- Pepper, to taste
- 2 tbsp olive oil
Ingredients– Bowl
- 1 cup white rice
- 1 red pepper, cubed
- 1 orange, cubed
- 1 cucumber, diced
- ¼ large red onion, diced
- 1 cup Roma tomatoes, quartered
- ¾ cup feta crumbles
Ingredients– Lemon Oil Dressing
- 4 TBSP Olive Oil
- 2 TBSP Lemon Juice
- 1.5 TBSP Honey
- 1 Garlic Clove, minced
- 1 TBSP Basil
- Salt and pepper to taste
Instructions (Bowl)
- In a large bowl, add ground turkey and minced garlic.
- Grate 1/4 red onion into turkey, alternatively chop red onion very small.
- Add egg, breadcrumbs, dill, oregano, salt, and pepper. Mix until just combined, I use my hands.
- Form into 15 meatballs.
- Begin cooking your rice per package directions.
- Heat a saucepan with olive oil over medium heat. Once hot, add meatballs and cook for 7-8 minutes, turning every constantly to ensure even cooking on all sides.
- While the meatballs cook, dice up the veggies for the bowl (pepper, cucumber, tomato)
- Once meatballs reach an internal temperature of 165F they are done.
- Serve over a bed of rice and chopped veggies.
- Top with feta, lemon oil dressing, and enjoy!
Instructions (Dressing)
- In a small mixing bowl, combine the olive oil, lemon juice, and honey and whisk until combined.
- Add in the remaining ingredients (garlic, basil, salt, and pepper) and whisk again until incorporated.
