Creamy Lemon Tofu Pasta

Today we are sharing a recipe for creamy lemon pasta that is absolutely delicious! If you’re looking for some hidden protein, this recipe is for you! Ingredients:
- 300g Silken tofu
- 3 cloves of garlic
- 1 tsp of each dijon mustard
- 1 tsp miso paste
- Juice of 1 lemon and its zest
- Chilli flakes
- Pasta of choice
- Salt and pepper to taste
- Fresh basil (for garnish)
Directions:
- Begin boiling water for pasta.
- Blend together silken tofu, garlic, miso paste, mustard, chilli flakes and lemon juice.
- Cook pasta until al dente. Reserve a cup of pasta water.
- Heat the creamy tofu mixture (AKA the lemon sauce) in a pan over medium heat for ~5 mins while pasta is cooking.
- Add the cooked pasta to the sauce and mix until coated. Add a little bit of pasta water to create a silky texture to thin the sauce. Keep adding pasta water until you get your desired consistency.
- Serve and top with salt, pepper, lemon zest, and fresh basil.
