Corbin’s Lemon Cookies

Prep: 35 min | Cook: 10 min | Total: 45 mins
Ingredients:
- 1 Box lemon cake mix
- 2 TBSP flour (sifted; pastry flour preferred)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 Eggs (large)
- ⅓ Cup Veggie Oil
- 1 Juiced lemon (grate the peel prior to for zest and fold into mix)
- Optional: White chocolate chip morsels– measure with your heart
Directions:
- Combine all ingredients in a large bowl.
- Stick mixture into freezer for 10-15 minutes to allow it to be scooped easier.
- While cookies are in freezer, set oven to 375 degrees.
- Line a baking tray with parchment paper.
- Using a cookie scooper, scoop dough into small balls. Keep each cookie ~ 1 inch apart.
- Bake cookies for 8 minutes. Undercook just a tad too avoid them getting too crunchy. Using residual heat to cook longer.
- Cool and enjoy!
