Recipe From Two Peas and Their Pod

Serving Size: Serves 10

Ingredients:

  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1 TBSP olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeño, diced
  • 2 bell peppers, diced (any color)
  • 1 cup corn kernels, frozen
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 TBSP chili powder
  • ⅓ cup cilantro, chopped
  • 30oz canned black beans, rinsed and drained
  • 2 cups enchilada sauce
  • 2 cups shredded Mexican cheese
  • Optional Toppings: Sliced green onions, avocado, sour cream, cilantro

Directions:

  1. Preheat the oven to 350 degrees F and grease a 9×13 baking dish.
  2. Add quinoa and water to a medium saucepan and bring to a boil. Boil for 5 minutes. Turn heat to low and simmer for 15 minutes, or, until water is absorbed. Remove from heat and fluff quinoa. Cover and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add the onion, garlic, and jalapeño. Sauté until softened (~5 minutes). Add in the peppers and corn. Cook for ~3-4 minutes. Add the lime juice, cumin, chili powder, and cilantro. Stir to combine.
  4. In a large bowl, combine the cooked quinoa to the black beans. Add the sautéed vegetable mixture and stir to combine. Pour enchilada sauce over mixture and stir. Add ½ cup shredded cheese at this time. Save the rest of the cheese for later.
  5. Pour the black bean and quinoa mixture into the baking dish. Top with remaining shredded cheese. Cover the pan with foil. Bake for 20 minutes, then remove foil. Bake an additional 10 minutes, or until the cheese is melted. Remove from the oven, and let cool.
  6. Garnish with toppings, if desired.
