Yield: 8 muffins
Ingredients:
1.5 c. black beans (1 15 oz. can)
1/2 c. oats
1/4 tsp. salt
1 scoop daily whey chocolate protein powder
1/3 c. honey
1/4 c. coconut oil
2 tsp. vanilla extract
1/2 tsp. baking soda
1/4 c. dark chocolate chips (70% cocoa)
Directions:
1. Pre-heat oven to 350 degrees.
2. Mix all ingredients (except chocolate chips) in a food processor until well blended. Stir in chocolate chips after blended.
3. Spray muffin tin with non stick cooking spray.
4. Bake for about 15 minutes or until middle is no longer runny.
5. Store in refrigerator.
